Rosy Radish Dip 

 
 

Ingredients:

  • 1 bunch Consalo Family Farm’s radishes

  • 2 tbsp fresh grated parmesan cheese

  • 8 oz plain cream cheese

  • ¼ cup plain Greek yogurt

  • 1 tbsp Italian seasoning

  • 2 tsp garlic (minced), a pinch of salt, and fresh chopped parsley  

 

Instructions:

  1. Preheat oven to 375. Line a baking sheet with parchment paper. 

  2. Trim, rinse and quarter radishes. Spread them out on the baking sheet and roast for approx. 20 min, until soft and slightly translucent. 

  3. Transfer roasted radishes to a food processor or blender. Then add the parmesan and cream cheese. Blend until mostly smooth. 

  4. Next add the yogurt and continue blending. 

  5. Add Italian seasoning, garlic and salt. Blend again. 

  6. Transfer to a serving dish. Top with fresh parsley as desired.  

  7. Serve with fresh veggies, crackers, baguette slices, etc.
