Blushing Beet Cloud Cake

 
 

Ingredients:

  • Blushing Beet Cream Cheese Frosting:

  • 1 cup cooked beets, cooled from Consalo Family Farms

  • 8 oz cream cheese (softened)

  • 1/2 cup unsalted butter (softened)

  • 2- 3 cups powdered sugar

  • 1 tsp vanilla extract

  • a pinch of salt

  • Angel Food Cake:

  • 12 large eggs

  • 1 1/2 cups powdered sugar

  • 1 cup cake flour or all-purpose flour

  • 1 1/2 teaspoons cream of tartar

  • 1 cup granulated sugar

  • 1 1/2 teaspoons vanilla 

  • 1/2 teaspoon almond extract 

  • 1/4 teaspoon salt

 

Instructions:

  1. Angel Food Cake:

  2. Seperate the egg whites from each egg. Transfer egg whites until there is 1 1/2 cups of egg whites

  3. Place the egg whites in a large bowl and let stand at room temperature for 30 mins

  4. Heat the oven to 375 F. In a medium bowl, mix the powdered sugar and flour; set aside.

  5. Add the cream of tartar to the egg whites; beat with an electric mixer on medium speed until mixture looks foamy. On high speed, beat in the granulated sugar, 2 tablespoons at a time; add the vanilla, almond extract and salt with the last addition of sugar. Continue beating until meringue is stiff and glossy.

  6. Sprinkle the powdered sugar-four mix, 1/4 cup at a time, over the meringue; to fold in the sugar-flour mix until completely combined. Spoon the batter into an ungreased cake pan.

  7. Bake for 30 to 35 minutes or until cracks in cake feel dry and top springs back when touched. Immediately turn pan upside down and let hang until completely cool. 

  8. Remove the cake from the pan and top with the Blushing Beet Cream Cheese Frosting and any other decorations you want. 

  9. Blushing Beet Cream Cheese Frosting:

  10. Blend cooked beets until completely smooth.

  11. Then, transfer to a small saucepan and simmer 5- 10 minutes, stirring often, until slightly thickened (this deepens the color). Let cool completely.

  12. Next, beat cream cheese and butter until smooth and fluffy.

  13. Add powdered sugar and mix until combined.

  14. Then, add vanilla and salt.

  15. Mix in 2- 4 tablespoons of the cooled beet puree, starting small and adding more until you reach that perfect blush pink. Beat until silky and smooth.

  16. Spread over your favorite angel food cake (homemade or store bought) and finish with fresh flowers, as shown/as desired for a simple, beautiful Mother’s Day dessert.
