Creamy Coconut Lime Chicken 

 
 

Ingredients:

  • 3 tbsp olive oil (divided)

  • 4 skinless, boneless chicken breasts

  • 3 shallots (finely sliced)

  • 4 garlic cloves (minced)

  • ¾ cup chicken broth

  • 1 can of coconut cream (shaken well)

  • the zest of two Little Smoochies limes

  • 2 tbsp fresh lime juice

  • Fresh Consalo Family Farms cilantro (chopped) and salt to taste 

 

Instructions:

  1. Heat 2 tbsp oil in a large skillet over medium-high. 

  2. Season chicken with salt and sear until golden on both sides (8-10 min. total). Remove and lower heat. 

  3. Add remaining oil and shallots, and sauté 1-2 min. Then add garlic and cook until fragrant. Pour in broth, scraping the pan, then stir in coconut cream. 

  4. Return chicken to the skillet with all juices from the plate and simmer until cooked, approximately 8-10 min. 

  5. Remove from heat, stir in lime zest and juice. Adjust seasonings as needed. Then garnish as desired/shown. 

  6. Serve as is or over rice.
