Creamy Spinach Dip
Ingredients:
Approximately 5-7 oz fresh spinach from Consalo Family Farms (stems removed)
8 oz cream cheese (softened)
½ cup sour cream, ⅓ cup mayonnaise, 1 small garlic clove (grated)
2 tbsp fresh chives (finely chopped)
1 tbsp fresh parsley (finely chopped)
1 tsp lemon juice, ½ tsp salt and ¼ tsp black pepper
Instructions:
Wash spinach thoroughly, finely chop, and gently squeeze out excess moisture.
In a bowl, mix cream cheese, sour cream, and mayonnaise until smooth.
Stir in garlic, lemon juice, salt, pepper, chives, and parsley.
Next, fold in the chopped spinach.
Chill for at least 60 minutes before serving
Serving Tip: Serve in a shallow bowl and surround with baby carrots, cucumber slices, toasted baguette, and/or pita rounds for an easy grazing board.
