Napa Cabbage Asian-Style Salad

 
 

Ingredients:

  • 1⁄2 cup sliced almonds

  • 1⁄2 cup of a large head of Consalo Family Farms napa cabbage

  • 3 Little Smoochies mandarin orange

  • 1⁄2 cup matchstick carrots, 1 red bell pepper

  • 4-5 Consalo Family Farms sliced green onion

  • Consalo Family Farms parsley finely chopped

Dressing

  • 3 tbsp rice wine vinegar

  • 3 tbsp olive oil

  • 1 and 1⁄2 tbsp sesame oil

  • 1 and 1⁄2 tbsp soy sauce

  • the juice of one Little Smoochies mandarin,

  • 1 tbsp maple syrup and salt and pepper to tast

 

Instructions:

  1. Toast almonds in the oven at 325 degrees for approximately 10 minutes until golden

  2. Combine all salad ingredients and toss to incorporate

  3. Make dressing by combining all dressing ingredients and whisking well

  4. Toss salad with enough of the dressing to coat. Top with the toasted almonds and parsley
