Fresh Lemon Lime Loaf Cake
Ingredients:
Cake
8 ounces cream cheese (room temp)
1⁄3 cup unsalted butter (room temp)
1 cup sugar
2 eggs
1 and 1⁄3 cup flour
1 and 1⁄2 tsp baking powder
1⁄2 tsp salt
1⁄2 cup milk
Zest of one Little Smoochies lemon and one lime
Icing
1 cup of powdered sugar
1 tbsp each fresh squeezed Little Smoochies lemon and lime juice
water as needed
Instructions:
Preheat the oven to 350 degrees. Butter and flour a standard size loaf pan. Set aside.
Using a stand mixer or hand mixer, combine cream cheese, butter and sugar.
Mix for several minutes until fully incorporated.Add in eggs. Mix until combined.
In a mixing bowl, combine flour, baking powder, and salt. Whisk to combine.
Add dry ingredients to wet. Add milk and lemon and lime zest. Mix until combined.
Transfer mixture into prepared pan. Bake for 45-55 minutes, or
until cooked through/golden. Then remove from the oven to cool for at least 15 minutes.Make glaze by combining all glaze ingredients until you’ve reached desired consistency.
Once the cake is partially cooled, transfer to a plate or wire rack. Drizzle glaze over top in a few
different layers, allowing a couple minutes in between each for the glaze to set.Slice and enjoy!
