Fresh Harvest Crunch Salad

 
 

Ingredients:

  • 2-3 Consalo Family Farms Romaine Hearts chopped

  • 2 cups Consalo Family Farms fresh spinach, rough chopped

  • 2 green apples, diced

  • 1⁄4 cup pepitas

  • 1⁄2 cup walnuts

  • 1⁄2 cup crumbled feta

  • 1⁄2 cup pomegranate arils

Dressing

  • 3 tbsp olive oil

  • 1 and 1⁄2 tbsp apple cider vinegar

  • 1 tbsp honey

  • 1 tsp Dijon mustard

  • A squeeze or two of Little Smoochies lemonsjuice and salt and pepper to taste

 

Instructions:

  1. In a large bowl, combine chopped romain hearts and spinach

  2. Next, add in the apple, pepitas, walnuts, feta and pomegranate arils. Set aside.

  3. In a small jar or bowl, whisk together olive oil, apple cider vinegar, honey, mustard, lemon juice, salt and pepper.

  4. Pour dressing over the salad and toss gently to combine. Taste and adjust seasonings as desired
