Rustic Blueberry Tart with Mandarin Zest

Ingredients:

1 pint Consalo Family Farms blueberries, washed

¼ cup granulated sugar + 1 tbsp for topping

½ tsp cinnamon

1 ½ tsp fresh mandarin juice

2 tbsp cornstarch

1 egg

1 pie crust, store bought

Little Smoochies ®  Mandarins, zested

Instructions:

  1. Preheat your oven to 350°F and prepare a baking sheet with parchment paper.

  2. In a large mixing bowl combine blueberries, sugar, cinnamon, lemon juice, and cornstarch and mix until the blueberries are well coated.

  3. Place pie crust on the baking sheet and add blueberries in the center of the crust leaving about 2-3 inches around the sides. 

  4. Fold the crust over the berries all the way around, leaving blueberries exposed in the center. 

  5. Whisk one egg in a small bowl and using a pastry brush, brush the top of the pie crust.

  6. Sprinkle the crust with 1 tbsp of sugar. 

  7. Bake for 15 minutes or until the crust is golden brown. 

  8. Sprinkle mandarin zest over blueberries.
